Water activity

DB Lab has equipment for determination of water activity in all types of small samples.

Microorganisms need free water for growth. Water activity (AW) is a measure for the amount of water that is not bound to e.g. salts and thus available for microorganisms, enzymes and chemicals. The water activity of a sample thus has a great influence on its stability.

Most bacteria cannot grow or survive in preserved products med water activity below 0.75 and most moulds cannot grow below 0.65.
